The region of Madrid combines tradition and renovation. Our area has been able to adapt to the times without renouncing its traditions. Although its most worthy representative is the cocido madrileño stew, paired with Vinos de Madrid, traditional cuisine offers much more, allowing us to taste the most authentic flavors. Enjoy your meal!
First of all and to whet your appetite, we will talk about the traditional dishes and, of course, its star dish, the cocido madrileño, which is served in three courses: first a soup, then chickpeas accompanied by vegetables and, finally, meats. Also typical are tripe, garlic soups, beef and lamb stews, hen in pepitoria, and red meat such as wild boar, fallow deer or partridge. We cannot forget the fish, with recipes as tasty as cod and baked sea bream.
But if there is something that represents us are the famous tapas among which we find the potato omelette with or without onion, fried eggs, patatas bravas, grilled ear, mushrooms, prawns with garlic or in batter, snails, offal dishes such as sweetbreads or redfish, or the well-known squid sandwiches. A classic!
And for dessert? We highlight the melons from Villaconejos or the strawberries from Aranjuez simply because of their unbeatable quality. Those with a sweet tooth are in luck as they will find a wide variety of sweets depending on the time of the year. Choose between buñuelos de viento and huesos de santo at All Saints; rosquillas tontas, lisas, francesas and Santa Clara at San Isidro; roscos de santo, tejas or torrijas at Easter; and the delicious roscón de reyes at Christmas.
Of course, and although it is not a dessert as such, the most popular, well-known and typical of Madrid may be the chocolate with churros, a perfect option to warm up on the coldest days of the year.
To finish our 'singular menu', we want to highlight the wines of the region, young, aromatic and fruity, whether rosé, red or white, and that since 1990 have the Designation of Origin "Vinos de Madrid". Also liquors such as the anisette of Chinchón or the popular beer or sangria, are ideal options to accompany meals and parties.
